The Post a Recipe Thread

I've searched for similar threads on this forum and haven't come across any yet. I think it'd be beneficial to post/share recipes that have been tried and tested by members :mrgreen: This is an all-inclusive thread that can include soups, main dishes, desserts, drinks, appetizers, etc, Somali food or otherwise. I hate having to cook but not knowing what I want to make, then wasting my time pondering. Hopefully this thread can help people who are looking for ideas for their next meal, or for an casuumad, or just wanting to try something new :up:

Hello dolly bars

1.5 cups of graham crackers
1/2 cup of unsalted butter, melted
1/2 cup of milk chocolate chips
1/2 cup of unsweetened coconut shavings
1/2 cup of peanut butter chips
1/2 cup of pecans
1 can of sweetened condensed milk

1. Mix graham crackers and butter in a bowl. Press into a 9x13 (2 inch deep) baking pan.
2. Spread chips, coconut and pecans ontop of the crust.
3. Pour condensed milk over pan.
4. Bake at 325 C degrees for 25 minutes or till the edges are golden brown

This is a pretty flexible recipe. Apart from the crust, chocolate chips and condensed milk, the other ingredients are optional. You can omit the pecans/peanut chips or substitute with other nuts/chips, as well as use more or less or no coconut.

Pancakes

2 cups all-purpose flour (250 grams)
2 tsp baking powder
¼ tsp salt
1 Tbsp granulated sugar
3 eggs
2 cups whole milk
2 Tbsp melted butter (plus more butter for cooking)

1. Pre-heat your griddle to 375° or heat a nonstick sauté pan or skillet over medium heat.

2.Pre-heat oven to 200°F.

3.Sift together flour, baking powder, sugar and salt.

4.Beat eggs thoroughly. Add the eggs, melted butter and half the milk to the dry ingredients and mix gently until combined. Now stir in the remaining milk until the batter is the desired consistency. Don't overmix!

5.Melt butter on the griddle or pan. It should foam and sizzle.

6.For each pancake, ladle ¼ cup of batter onto the griddle or pan.

7.Cook until the tops of the pancakes are full of bubbles and the bottoms are golden brown.

8.Flip the pancakes and cook until the tops are golden brown, then either serve right away or transfer to the oven to keep warm.

Waffles

2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 3/4 cups milk
1/3 cup vegetable oil
2 eggs

1. Combine the flour, sugar, baking powder, and salt in a mixing bowl.

2. Whisk the milk, vegetable oil, and eggs together well.

3. Gradually pour the milk mixture into the dry mixture. Stir until almost blended. There will be a few lumps.

4. Pour the batter into your waffle maker (about 1/3 cup)and cook according to instructions - approximately 4-6 minutes on medium high or until the waffle maker stops steaming.

Can I have a recipe for suugo please?
1 chopped onion
2 chopped cloves of garlic
1/4 of a bell pepper chopped
1/2 a japaleno chopped
1 ripe tomato chopped
A few cilantro leaves chopped
Whatever meat you have

If your meat isn't frozen, place it into a pot on medium heat w/ some oil. Make sure oil coats meat and turn it over to allow all sides to cook. Add onion and garlic. Sautee for 5-10 minutes, adding oil if necessary. If you're picky with veggies, blend bell peppers, japaleno, tomato and cilantro together with some water then add to the pot. If not, add bells peppers and jalapenos when onions turn a bit yellow and translucent. Make sure to stir and keep flipping over meat. Add a bit a water if the veggies/meat stick to the pot. Add in tomatoes and cilantro when bell peppers soften. Keep stirring and adding water when necessary. Allow to cook until tomatoes are all mushy. Add salt, pepper, cumin, and chilli powder. Mix well. By this time your meat should be cooked well and onions are hardly visible. Add tomato paste or pasta sauce. For every cup of pasta sauce, add 1 cup of water. With tomato paste, you gotta eye ball it. I'd say 1/2 cup for every 2 heaping table spoons. Stir well and cover pot w/ lid. Allow to simmer for 10-15 minutes, then stir. Make sure nothing sticks to the bottom of the pot. Taste for salt/seasonings. You'll know your suugo is ready when oil begins to collect at the top of the sauce.
