You are right on the light part, we wont see darkness for eight mins, but how about the gravity effect? we orbit around the sun so what do you think will happen?

Earth will be long dead before the Sun dwarfs out. Earth will likely be roasted before the Sun peaks in maturity. Or be iced over. Or be moved into an orbit where life can't be sustained.
Anyway, let's enjoy the sights while the ride lasts.

Then the Earth will fly off into space since the sun's gravitational pull on it will disappear.
