If someone thinks you're going to screw them over does that mean they are just cautious or that's what they would do given the chance?

The latter I think.Because people always think other people behave how they would behave.Either that or they' have a very paranoid personality

Yeah.On the expectations, signed contracts whenever possible.
U can use that chance to create a modal on how the business is to be run.A concept where little actual trusting is needed and each partner knows exactly what is going as well.

It's being cautious. And you must be cautious in a business relationship/partnership.
I have a close friend whose father made a career for himself selling medical equipment and accessories to clinics, doctor's offices and hospitals across the Middle East. He had a business partner and they were doing very well for themselves. Not only was he his business partner but a friend of his since his childhood. One day, his business partner just vanishes. Not only does he vanish but over $1,000,000 in cash and medical equipment vanishes. Gone. He never heard from his friend ever again. The guy is still doing well for himself though even with what has happened but my friend told me that his father swore he would never be friends with anyone ever again.

Of course you have to be cautious that's common sense really. But you don't have "Mistrust" as you default setting as is indicated here
If you have that in mind from the beginning then there's no point in seeking a partnership in business

People seek partnerships in business for basically one or both reasons: capital and assistance. Obviously you need money to start something and you might need an extra pair of hands if your business is designed to have more than one person running it. If it were up to anyone, people would rather run their business alone. You can't trust people. However, sometimes its just not possible to go it alone sometimes
I know this sounds strange but you must not trust your business partners at all. People are almost always forced to seek partnerships in business even when they don't want to. But that doesn't mean you should trust your business partner. Never ever trust your business partner. When people are looking for business partners, they must choose the guy/woman they think is less evil. Everyone is evil in the business world but you must choose the lesser of two/or multiple evils. Once its established, you watch them like a hawk.
You must be cautious and you must mistrust.

If that's what the person said to you, I'd proceed with caution in terms of dealing with that individual, definitely not something one should say when going into a business partnership.

Enter a contract or something, if there is legality then you can diversify your risks. If you can't cooperate based on goodwill then take all necessary action to protect your business.

When it comes to business, don't trust anyone. Even a person you are deeply intimate with. After all money makes people act funny.
